
Chef Jimmy Chok
is the Executive Chef of The Academy Bistro at The
Supreme Court, Supreme Court Lane. The former chef and owner
of Salt restaurant is today recognized as one of the
most talented young chefs in Singapore. His expertise lies in
combining the best of what the east and west have to offer to
create dishes that are not only innovative, but also a delight
to the eye and palate.
Jimmy Chok began his career at the Restaurant Salzwaage
Zurich in Switzerland. He then returned to Singapore to
work at some of the country’s most prestigious kitchens.
They include the world-renown Raffles Hotel, Fig Leaf Restaurant,
the Tung Lok’s Group’s House of Mao, Butterbean
Bristo and Coriander Leaf Restaurant. He has also
won several awards from Food & Hotel Asia Hot Cooking in
1996, 1998 and 2000, and was invited to be on the panel of judges
for Food & Hotel Asia 2002 and 2004 for the category of
New Asia Cuisine Category.
His
book, Simple: Cuisine of a New Generation
is a collection of 60 innovative recipes that exploit eastern
and western cooking techniques and ingredients to amazing
effect. The dishes featured are set to tantalise both the
tastebuds and the senses. (Available at major bookstores and
